Autumn Chicken with Zucchini, Tomatoes, and Corn

Ears of corn, zucchini and tomato are cut into cut into large pieces. Corn and zucchini pieces are arranged around chicken breasts in baking dish and baked about a half an hour. Tomato pieces are added to baking dish and chicken and vegetables are baked another 15 minutes. Chicken and vegetables are served with lemon sauce prepared from fresh lemon juice, extra-virgin olive oil, white sugar, chopped fresh basil, crushed red pepper and sea salt.

Ingredients -

1/4 teaspoon Crushed Red Pepper
2 tablespoons Chopped Fresh Basil
1/2 teaspoon Dried Oregano Leaves
2 Medium Zucchini
4 Large Plum Tomatoes
3 tablespoons Fresh Lemon Juice
4 Medium Bone-In Chicken Breasts
4 Ears of Corn, shucked
1 tablespoon Extra-Virgin Olive Oil
1/2 teaspoon White Sugar
1/2 teaspoon Sea Salt

 
Preparation:

1. Turn the oven to 400 degrees and preheat.

2. Slice each corn cob into 3 chunks as well as each zucchini into 3 chunks.

3. Cut each tomato in half.

4. Add the chicken to a large roasting pan and sprinkle with 1/2 teaspoon of salt and oregano.

5. Arrange the zucchini and corn chunks around the chicken in the pan and bake for 35 minutes.

6. Add the tomato halves and bake for another 15 to 20 minutes or until the chicken is cooked through.

7. In a small bowl, combine the lemon juice, olive oil, sugar, basil, oregano, crushed red pepper, and salt.

8. Serve the chicken and vegetables drizzled with the lemon mixture.
