1. Pound the chicken with a meat mallet into 1/2-inch thickness.
2. Spread 3 tablespoons cream cheese over each.
3. Place little dots of butter on top and sprinkle liberally with salt.
4. Roll the chicken up and wrap each with a strip of bacon.
5. Spray a 13 x 9-inch baking dish with nonstick cooking spray.
6. Place the chicken, seam side down into the prepared dish.
7. Bake for 40 minutes in a 400 degree oven, or until the internal temperature reaches 170 degrees.
8. Place the pan underneath the broiler for 5 minutes, or until the bacon becomes crisp. |
