Baked Chicken with Garlic and Parmesan

Chicken breasts are dipped in mixture of extra-virgin olive oil and minced garlic and dredged in mixture of dry bread crumbs, grated fresh parmesan cheese, dried basil leaves, and fresh ground black pepper.  Chicken is placed in prepared baking dish, topped with additional bread crumbs and baked until golden brown on the outside and juices run clear.

Ingredients -

2 tablespoons Extra Virgin Olive Oil
1 Garlic Clove, minced
1 cup Dry Bread Crumbs
2/3 cup Grated Fresh Parmesan Cheese
1 teaspoon Dried Basil Leaves
1/4 teaspoon Fresh Ground Black Pepper
6 Boneless, Skinless Chicken Breast Halves

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Spray a 13 x 9 inch glass baking dish with nonstick cooking spray.

3. Combine the garlic and olive oil in a small bowl and mix well.

4. Combine the bread crumbs, cheese, basil and black pepper in another bowl and mix well.

5. Dip the chicken in the garlic oil followed by the dry mixture.

6. Place the chicken in the prepared dish and top with the extra bread crumb mixture.

7. Bake for 30 minutes or until the internal temperature of the chicken reaches 170 degrees.

8. Serve.

Buying and Storing Garlic

Garlic, especially the American white variety, is readily available year-round. You can purchase American garlic in heads, each head containing around 12 cloves. The garlic should feel firm, and the dry, papery skin should be intact. Heads should show no sprouting. The heads should be stored in an open container with the cloves secured to the base of the head. Garlic will keep for a month or two stored properly.
