Baked Chicken with Honey and Pecan Crust

Chicken breasts are dipped in egg and honey mixture and dredged in mixture of finely chopped pecans, dry bread crumbs, coarse salt, and fresh ground black pepper. Breasts are baked in hot oven until juices run clear and crust is golden brown.

Ingredients -
2 Large Eggs
1/2 cup Honey
1 cup Finely Chopped Pecans or Walnuts
1 cup Dry Bread Crumbs
Coarse Salt to taste
Fresh Ground Black Pepper to taste
6 Boneless, Skinless Chicken Breasts
1/4 cup Unsalted Butter, melted
 
Preparation:

1. Turn the oven to 375 degrees and preheat.

2. Combine the eggs and honey in a bowl and mix until thoroughly blended.

3. Combine the pecans, bread crumbs, salt and pepper in another bowl and blend well.

4. Dip the chicken breasts in the honey mixture then dip in the bread crumb mixture, thoroughly coating all sides.

5. Arrange the dredged chicken breasts in a 13 x 9 inch glass baking dish and drizzle melted butter over the top.

6. Bake until the chicken is no longer pink, which takes about 40 to 45 minutes.

Pecan Storage

Whole, unshelled pecans should be stored in a cool dry location, and can be kept, if stored properly for up to 6 months. Shelled pecans should be refrigerated in an airtight container. Refrigerated, the pecan pieces will last between 3 and 6 months. Pecans with their high fat content are susceptible to become rancid.
