Chicken and Asparagus Pie with Bacon and Cheese

Pastry shell filled with layers of cooked fresh asparagus spears, crisp crumbled bacon, cooked and chopped chicken, and shredded processed American cheese. Pie filling is topped with mixture of beaten egg, light cream, all-purpose flour, and coarse salt. Garnished with paprika, pie is baked until egg has set completely, about 45 minutes.

Ingredients -

1 cup Cooked Fresh Asparagus
1 (9 inches) Unbaked Pastry Shell
1 cup Chopped Cooked Chicken
3 Bacon Slices, cooked crisp and crumbled
1/3 cup Shredded Processed American Cheese
3 Eggs
1-1/3 cups Light Cream
2 teaspoons All-Purpose Flour
1/2 teaspoon Coarse Salt
Paprika

 
Preparation:

1. Lay the asparagus spears in the bottom of the pastry shell.

2. Layer the bacon, chicken and cheese on top.

3. Beat together the eggs, cream, flour and salt in a small bowl.

4. Pour the egg mixture into the pastry shell and sprinkle with paprika.

5. Bake for 45-50 minutes at 345 degrees, or until a toothpick insertedinto the center comes out clean.

6. Allow the pie to stand for 10 minutes before serving.

This means the chicken has not finished cooking. Chicken should reach an internal temperature of 165 F to ensure that bacteria has been killed and the chicken has been cooked properly.

You can tell when a chicken breast is cooked through because when you touch it, the flesh feels springy. The centers are also no longer pink and the juices that run out when you cut into the breast are clear.
