1. Preheat oven to 350 F.
2. Grease a 13 x 9 inch baking pan.
3. Place sliced potatoes and onion wedges in baking pan.
4. Place chicken breasts over vegetables.
5. In a small bowl, combine tarragon, sage, salt and pepper. Sprinkle over chicken breasts.
6. Cut top off garlic bulb. Place cut side up in baking dish.
7. Drizzle olive oil over garlic.
8. Cover baking dish with foil and bake 60 minutes.
9. Remove foil and bake 15 minutes.
10. Remove baking ban from oven. Remove garlic bulb from baking pan and cool 5 minutes.
11. Transfer chicken to serving platter.
12. Transfer potatoes and onions to serving bowl.
13. Gently squeeze garlic into a small bowl
14. Mash garlic lightly. Toss garlic with potatoes and onion.
15. Arrange potatoes and onions around chicken. |
