Chicken And Garlic Potatoes

Boneless, skinless chicken breasts with potatoes, and onions, and flavored with roasted garlic, dried tarragon, rubbed sage, coarse salt, and fresh ground black pepper.

Ingredients -
4 Medium Potatoes, peeled and sliced
1 Large White Onion, cut into small wedges
6 Boneless, Skinless, Chicken Breast Halves
1 teaspoon Dried Tarragon
1 teaspoon Rubbed Sage
1 teaspoon Coarse Salt
1/2 teaspoon Fresh Ground Black Pepper
1 Whole Head Garlic
3 tablespoons Olive Oil
 
Preparation:

1. Preheat oven to 350 F.

2. Grease a 13 x 9 inch baking pan.

3. Place sliced potatoes and onion wedges in baking pan.

4. Place chicken breasts over vegetables.

5. In a small bowl, combine tarragon, sage, salt and pepper. Sprinkle over chicken breasts.

6. Cut top off garlic bulb. Place cut side up in baking dish.

7. Drizzle olive oil over garlic.

8. Cover baking dish with foil and bake 60 minutes.

9. Remove foil and bake 15 minutes.

10. Remove baking ban from oven. Remove garlic bulb from baking pan and cool 5 minutes.

11. Transfer chicken to serving platter.

12. Transfer potatoes and onions to serving bowl.

13. Gently squeeze garlic into a small bowl

14. Mash garlic lightly. Toss garlic with potatoes and onion.

15. Arrange potatoes and onions around chicken.

Rubbed sage is found in most supermarkets in the spice section. The sage has been ground minimally and takes on a fluffy texture, unlike other spices.

Roasting Garlic
