Chicken Caesar

Chicken tossed in cayenne pepper seasoned breadcrumbs and tossed in caesar dressing. Chicken breasts are seared quickly and then backed until golden brown. Serve chicken caesar with steamed white or brown rice.

Ingredients -
1/3 cup S Caesar Salad Dressing
1/2 cup Plain Dry Breadcrumbs
1/8 teaspoon Cayenne Pepper
1/4 teaspoon Coarse Salt, divided
4 Boneless, Skinless Chicken Breast Halves
3 teaspoons Olive Oil
Coarse Salt, to taste
Fresh Ground Black Pepper, to taste
 
Preparation:

1. Preheat oven to 350 F.

2. Add Caesar dressing to a shallow bowl.

3. In a separate shallow bowl, combine breadcrumbs, cayenne pepper, and salt.

4. Toss chicken in Caesar dressing, then in breadcrumb mixture.

5. Heat a large non-stick saute pan or skillet over medium heat. Add olive oil.

6. When oil is hot, sear the breast halves quickly, drain oil back into saute pan, and place chicken on a rack in a baking pan.

7. Season chicken breasts lightly with salt and pepper.

8. Bake chicken breasts 20 to 25 minutes, or until cooked through and golden brown.

9. Makes 4 servings.

Homemade Caesar Salad Dressing
Mix 1 cup mayonnaise, 1 teaspoon Worcestershire, 1 minced clove garlic, 1 tablespoon lemon juice, 1 tablespoon half and half, 1/2 cup parmesan cheese,1/4 teaspoon salt, and 1/8 teaspoon pepper, together and whisk until well blended.

Plain Dry Bread Crumbs
Bake a couple bread slices in a 200 F. oven until slightly dry. Add bread slices to food processor and pulse to desired texture.
