Chicken Fingers

Chicken breast strips dipped in egg and dredged in mixture of crushed cornflakes, grated fresh parmesan cheese, paprika, coarse salt, and fresh ground black pepper. Prepared chicken strips are baked in hot oven until cooked through and served with dipping sauce.

Ingredients -

4 Boneless Skinless Chicken Breasts
1-1/4 cups Crushed Cornflakes
1/3 cup Grated Fresh Parmesan Cheese
1 teaspoon Paprika
1/4 teaspoon Coarse Salt
1/8 teaspoon Fresh Ground Black Pepper
2 Large Eggs
Favorite Dipping Sauce

 
Preparation:

1. Turn the oven to 450 degrees and preheat.

2. Slice the chicken breasts into thin strips.

3. In a medium bowl, combine the next 5 ingredients and mix well.

4. In another medium bowl, whisk together the eggs until fluffy.

5. Line a baking sheet with aluminum foil and spray with nonstick cooking spray.

6. Dip the chicken in the egg bath, and then dredge in the cornflake mixture.

7. Transfer the chicken to the baking pan and bake until done, which takes about 20 minutes.

8. Serve with favorite dipping sauce.

Cutting Boards

When working with raw chicken, use a separate cutting board from the one you use for other foods. Never use a wood cutting board, use a nonporous board like plastic. When you are finished, wash the board in the dishwasher or in hot soapy water.

Crushed Cornflakes

Cornflakes offer a nice crunch and a neutral flavor making them ideal for breading chicken breasts. Potato chips also work very well, adding some saltiness and crunchy texture. Crushed crackers and bread crumbs can also be used with great success. Experiment with your favorite brand of cereal, chip cracker or bread crumb and create new flavor combinations.
