Chicken with Mushrooms

Boneless, skinless chicken breasts dipped in beaten egg and dredged in bread crumbs. Prepared chicken browned in butter and placed over sliced mushrooms in baking dish. Breasts are topped with Mozzarella cheese slices and chicken broth is poured in over mushrooms. Chicken is baked until cooked through and cheese has melted.

Ingredients -

3 cups Sliced Fresh Mushrooms
4 Boneless Skinless Chicken Breast Halves
2 Large Eggs, beaten
1 cup Seasoned Bread Crumbs
2 tablespoons Butter
6 ounces Mozzarella Cheese, sliced
3/4 cups Chicken Broth

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Add the sliced mushrooms to a 13 x 9 inch baking dish.

3. Dredge the chicken in the egg wash followed by the bread crumbs, coating well.

4. Add the butter to a skillet with the chicken and brown over medium heat.

5. Transfer the chicken to the pan with the mushrooms and top with the sliced cheese.

6. Pour in the chicken broth.

7. Bake until the chicken juices run clear, which takes about 30 to 35 minutes.

8. Serve and enjoy.

Seasoned Bread Crumbs

Seasoned bread crumbs can be purchased at most supermarkets and come in a number of varieties. They can be made at home by adding dried herbs and spices to plain store bought bread crumbs and mixing together, or by processing dried bread in the food processor with dried herbs and spices.
