Greek Chicken

Chicken breasts stuffed with mixture of sautéed onion and garlic combined with spinach, coarse salt, fresh ground black pepper, and ground nutmeg. Chicken breasts are topped with mixture of garlic, dried oregano, and bread crumbs. Stuffed chicken breasts are baked in hot oven until cooked through.

Ingredients -
4 Boneless, Skinless Chicken Breasts
1/2 cup Crumbled Greek Feta Cheese
1 teaspoon Dried Oregano
1 cup Bread Crumbs
3 tablespoons Butter
Nutmeg, to taste
Salt
Fresh Ground Black Pepper
1 (10 ounces) box Chopped Frozen Spinach, thawed
3 Garlic Cloves, finely chopped
1/2 White or Yellow Onion, finely chopped
2 tablespoons Olive or Vegetable Oil
 
Preparation:

1. Turn the oven to 425 degrees and preheat.

2. Add 1 tablespoon oil to a large skillet and heat over medium-high heat.

3. Add the onion and 2/3 of the garlic and cook for 5 minutes or until softened, being careful not to burn.

4. Transfer the mixture to a bowl and set aside to cool.

5. When cool, add the spinach, salt, pepper and nutmeg and stir well.

6. In the same pan, add the butter and melt.

7. Remove the pan from the heat and add the remaining garlic, oregano and bread crumbs, tossing to mix.

8. Drizzle the remaining oil on the bottom of a baking dish.

9. Butterfly the chicken breasts and open like a book.

10. Stuff the center with the spinach mixture and place each breast in the baking dish.

11. Sprinkle the bread crumb mixture on top.

12. Bake for 20 minutes or until the chicken is cooked through.

13. Serve and enjoy.

Crumbled Greek Feta Cheese

Feta cheese is originally a product of Greece. The slightly grainy, slightly salty cheese is sold in blocks. Crumbling feta for use in recipes is not difficult as the cheese falls apart quite nicely. Feta is delicious eaten raw and is a staple on salads. Feta melts quite nicely and is used in baking and on grilled sandwiches. Look for feta cheese in the supermarket deli section with other specialty cheeses.

Garlic Cloves

American white garlic is sold in heads with approximately a dozen cloves attached to the base. Store fresh garlic heads in an open bowl or container in a cool, dry location. Remove cloves only as needed and they will last up to several months. Remove the papery skin from individual cloves after removing the cloves from the head. Trim off the hard tiny bits at the end of the cloves before using in recipes.
