Herbed Baked Chicken

Chicken breasts are dipped in melted butter and dredged in mixture of bread crumbs, chopped fresh parsley, garlic powder, fresh ground black pepper, coarse salt, and grated fresh parmesan cheese. Chicken is arranged in prepared baking dish, sprinkled with paprika, and baked until chicken is cooked through, golden on top and juices run clear.

Ingredients -

2 cups Bread Crumbs
1/4 cup Chopped Fresh Parsley
1/8 teaspoon Garlic Powder
2 teaspoons Fresh Ground Black Pepper
3/4 cups Grated Fresh Parmesan Cheese
2 teaspoons Salt
3/4 teaspoons Paprika
1 stick Real Butter, melted
6 Boneless, Skinless Chicken Breasts

 
Preparation:

1. Combine the first 6 ingredients in a large shallow bowl and mix well.

2. Dip the chicken breasts in the melted butter then dredge in the dry mixture.

3. Place the dredged chicken in a casserole baking dish that has been sprayed with olive oil cooking spray.

4. Sprinkle the top with paprika.

5. Bake for 1 hour, covered with foil, at 350 degrees.

Bread Crumbs

Bread crumbs can be made at home using dried out bread. Tear the bread into small pieces and add to the food processor. Pulse until smooth. Placing bread in the toaster for a few seconds can speed the process of drying out bread, otherwise it can be placed on a plate and left on the counter for a few hours. Bread crumbs can be purchased in a number of varieties at the supermarket.

Fresh Parmesan Cheese

Parmesan is the term Americans use loosely for Parmigiano-Reggiano cheese, a hard granular cheese named for the region in Italy that authentic cheese is produced. Parmesan also refers to cheese produced with the label Italian hard cheese that is an imitation of Parmigiano-Reggiano cheese. Grana Padano is similar to Parmigiano-Reggiano cheese.
