Lemon and Dill Chicken with Orzo

Boneless chicken breast pieces, coarsely chopped dill, dry orzo pasta, crumbled feta cheese, fresh lemon juice, and fresh lemon zest arranged in baking dish. Cooking liquid prepared from chicken broth, water, unsalted butter, coarse salt, and fresh ground black pepper is poured into baking dish. Chicken and orzo dish is baked in hot oven until orzo is tender and chicken is cooked through.

Ingredients -
4 cups Chicken Broth
3/4 cup Water
1 tablespoon Unsalted Butter
1-1/4 teaspoon Salt
1/4 teaspoon Fresh Ground Black Pepper
1 pound Boneless, Skinless Chicken Breasts, sliced into 1-inch pieces
1 pound Dry Orzo Pasta
6 ounces (about 1-1/2 cup) Crumbled Feta Cheese
1/4 cup Coarsely Chopped Fresh Dill
1 to 2 tablespoons Fresh Lemon Juice
2 teaspoons Grated Fresh Lemon Zest
4 ounces (about 1 cup) grated Fresh Parmesan Cheese
 
Preparation:

1. Turn the oven to 400 degrees and preheat.

2. Combine the first 5 ingredients in a medium saucepan and bring to a boil.

3. Remove the pan from the heat.

4. Spray a 3 quart baking dish with nonstick cooking spray.

5. Add the chicken, orzo, dill, feta, lemon juice/zest to the dish.

6. Pour the broth mixture over the top and stir until evenly combined.

7. Place into the oven and bake for 40 minutes, or until the orzo is tender and the chicken is cooked through.

8. Remove the pan from the oven and sprinkle the top with cheese.

9. Allow the pan to sit until the cheese melts, which takes about 5 minutes.

Orzo is pasta in the shape of a large grain of rice. Orzo is very popular for use in casseroles and soups. Orzo can be prepared in boiling water in 10 minutes or less. Look for orzo with the other pasta and in the Italian section of your favorite supermarket.

Buying Chicken Breasts

Pick up chicken last when shopping to keep it as cold as possible for the trip home. Check the color and smell of the chicken and check package for any leakage or freezer damage. Check the purchase by or use by date on the package before buying, another sign of freshness. Wrap in plastic bags provided by meat department, keep away from other groceries to avoid possible bacterial contamination and ask that the chicken be double bagged in plastic when checking out at the register.
