Mexican Chicken and Stuffing

Chicken flavor stuffing mix combined with hot water, butter and salsa in baking dish. Boneless, skinless chicken breasts arranged over stuffing and topped with additional salsa. Prepared dish is baked until chicken is cooked through and juices run clear. Shredded Monterrey Jack cheese is sprinkled over cooked chicken and dish is returned to oven for a few more minutes to melt cheese.

Ingredients -

1 cup Hot Water
2 tablespoons Butter
2 cups Chicken Flavor Stuffing Mix
1/4 cup Medium or Hot Salsa
4 Boneless, Skinless Chicken Breast Halves
1/2 cup Shredded Monterey Jack Cheese

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Add the hot water and butter to a small bowl and stir until melted.

3. Pour the butter into a 13 x 9 inch baking dish.

4. Stir the stuffing mix into the butter and add 1/4 cup of the hot salsa.

5. Lay the chicken on top and pour the rest of the hot salsa over the chicken.

6. Cover with foil and bake until the chicken juices run clear, which takes about 30 minutes.

7. Remove the foil, sprinkle the Monterey Jack cheese on top and bake for 5 more minutes.

Cooking Chicken to Proper Temperature

Cook chicken to an internal temperature of 165 degrees F to ensure it is properly cooked. A meat thermometer will do the trick. Insert thermometer in thickest part of largest piece of chicken. Never serve chicken to anyone that has not been thoroughly cooked. When chicken is done cooking the juices will run clear.

Salsa

Medium or hot salsa can be purchased or made at home using tomatoes, onion, and fresh jalapeno or serrano chilies. Salsa recipes vary in the amount of chile pepper added to create more or less heat in the salsa
