Mushroom Chicken

Chicken breast pieces are tossed in egg and bread crumbs, pan fried briefly before being transferred to baking dish. Chicken is seasoned with Cajun seasoning, topped mushrooms, Muenster cheese, and baked until chicken is cooked through and cheese has melted.

Ingredients -
2 Large Eggs
1 cup Seasoned Bread Crumbs
1 pound Boneless, Skinless Chicken Breasts, cut into 1 inch cubes
2 tablespoons Vegetable Oil
1/2 teaspoon Cajun Seasoning
1/2 pound Sliced Fresh Mushrooms
10 ounces Muenster Cheese, thinly sliced
 
Preparation:

1. Beat eggs in a shallow bowl. Place bread crumbs in a large resealable plastic bag.

2. Dip chicken in eggs, then place in bag and shake to coat.

3. In a large skillet, cook chicken in oil over medium heat for 4 minutes, stirring occasionally.

4. Transfer chicken to a greased 13 x 9 inch baking dish.

5. Sprinkle with Cajun seasoning. Top with mushrooms and cheese.

6. Cover and bake at 350 degrees for 30 to 35 minutes or until chicken juices run clear.

Most mushrooms consist of about 90% water. Mushrooms are low in calories and low in fat. Mushrooms are a good source of vegetable protein. Mushrooms contain varying quantities of vitamin E, vitamin D, and B vitamins.
