Parmesan Breaded Chicken Breast

Chicken dipped in melted butter and dredged in mixture of grated fresh parmesan cheese, dry bread crumbs, dried oregano, dried parsley flakes, paprika, coarse salt, and fresh ground black pepper. Prepared chicken is arranged in baking dish and baked in hot oven until chicken has cooked through and juices run clear.

Ingredients -

1/2 cup Grated Fresh Parmesan Cheese
1/4 cup Dry Bread Crumbs
1 teaspoon Dried Oregano
1 teaspoon Dried Parsley Flakes
1/4 teaspoon Paprika
1/4 teaspoon Coarse Salt
1/4 teaspoon Fresh Ground Black Pepper
2 pounds Boneless, Skinless Chicken Breast Halves
2 tablespoons Butter, melted

 
Preparation:

1. Turn the oven to 400 degrees and preheat.

2. Combine the first 7 ingredients in a shallow dish and mix well.

3. Dip the chicken breasts in the melted butter then coat with the bread crumb mixture.

4. Spray a 10 x 15 inch baking pan with nonstick cooking spray.

5. Arrange the chicken in the prepared pan.

6. Bake for 20 to 25 minutes or until cooked through.

Defrosting Chicken

The safest ways to defrost chicken are in the microwave, in cold water, and in the refrigerator. When possible, a slow defrosting in the refrigerator is the best method. When defrosting in cold water, the chicken should be in a leak proof, airtight plastic bag for best results. Once chicken has been defrosted it should be used within 24 to 48 hours.

Dry Bread Crumbs

You can make dried bread crumbs in your food processor with pieces of bread that have set on a counter for a few hours to lose moisture. Place pieces of dry bread in the food processor and process to the deried consistency. If the bread is too moist it will not work well. Simply let the bread set a bit longer in the food processor bowl (exposed to air), and reprocess.
