Pecan and Honey Crusted Chicken Breasts

Boneless, skinless chicken breasts brined in salt water, dipped in mixture of fresh honey, milk, egg, sea salt, and fresh ground black pepper, and dredged in ground pecans. Breasts are arranged on non-stick baking sheets and baked until golden brown and cooked through.

Ingredients -

6 Boneless, Skinless Chicken Breasts, pounded thin
4 cups Ice Water and Ice
4 teaspoons Sea Salt
3/4 cup Ground Pecans
2 Large Eggs, beaten
2 tablespoons Whole or 2% Milk
2 tablespoons Fresh Honey
1/2 teaspoon Sea Salt
1/2 teaspoon Fresh Ground Black Pepper

 
Preparation:

1. Turn the oven to 375 degrees and preheat.

2. Marinate the chicken breasts in an iced salt water bath for 1/2 hour.

3. In a shallow bowl, combine the honey, milk, egg, salt and pepper and whisk well.

4. Add the ground pecans to another shallow bowl.

5. Dip the chicken in the egg wash then into the pecans and coat evenly.

6. Spray a baking dish with nonstick cooking spray.

7. Arrange the chicken in the prepare dish and bake for 35 minutes or until the internal temperature reaches 165 degrees.

Ground Pecans

Shelled pecans should be stored in an airtight container in the refrigerator, where they will keep well for several months. Whole, unshelled pecans should be stored in a cool dry location. They will keep well for about 6 months if stored properly. Pecans can become rancid as a result of the high amount of oil in the nut that can go bad over time.

Flattening Boneless Chicken Breasts

Boneless skinless chicken breasts are often flattened with a meat mallet to make cooking more consistent. The flattened chicken breasts are sometimes breaded and baked, or a layer of filling is spread on the top and the breasts is rolled and secured before baking. Flatten breasts by placing between two sheets of waxed paper and pounding them to the desired thickness with a meat mallet.
