1. Preheat the oven to 350 F.
2. Grease a 13” x 9” inch baking pan.
3. Place sliced potatoes and onion wedges in baking pan.
4. Place the chicken breasts over the vegetables.
5. In a small bowl, combine the tarragon, sage, salt and pepper. Sprinkle seasoning mixture over the chicken breasts.
6. Cut the top off the garlic bulb. Place cut side up in baking dish.
7. Drizzle extra virgin olive oil over garlic bulb.
8. Cover the baking dish with foil and bake 60 minutes.
9. Remove the foil and bake additional 15 minutes.
10. Remove the baking pan from oven. Transfer garlic bulb from baking pan to small and cool 5 minutes.
11. Transfer chicken to serving platter.
12. Transfer potatoes and onions to serving bowl.
13. Gently squeeze roasted garlic into the bowl.
14. Mash garlic lightly with back of fork. Toss roasted garlic with potatoes and onion.
15. Arrange potatoes and onions around chicken. |
