Savory Chicken with Mushrooms Garlic and Monterrey Jack Cheese

Boneless chicken breasts dipped in beaten egg and dredged in seasoned bread crumbs. Breaded chicken is sauteed in olive oil until browned on both sides. Chicken is arranged in shallow baking dish with chicken broth, and topped with sautéed mushroom slices, finely chopped garlic and shredded Monterrey Jack Cheese. Dish is baked in hot oven to finish chicken and melt cheese.

Ingredients -

3 Boneless, Skinless Chicken Breasts, cut into inch thick strips
3 cups Seasoned Bread Crumbs
2 Large Eggs
1/4 cup Extra-Virgin Olive Oil
1-1/2 cups Chicken Broth
2 cups Shredded Monterey Jack Cheese
1 (8 ounces) package Sliced Fresh Mushrooms
2 Garlic Cloves, finely chopped

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. In a small bowl, whisk the eggs until blended.

3. Add the bread crumbs to a shallow dish.

4. Dip the chicken in the egg, then coat with the bread crumbs and set to the side.

5. Add the olive oil to a large frying pan and heat to hot.

6. Fry the chicken until browned on all sides.

7. Transfer to paper towels to drain.

8. Add the mushrooms to the same pan with the garlic and sauté until the mushrooms are tender, which takes about 3 to 5 minutes.

9. Spray a 13 x 9 inch baking pan with nonstick cooking spray.

10. Transfer the chicken to the prepared pan.

11. Pour in the chicken broth, sauteed mushrooms and garlic over the chicken and sprinkle with shredded cheese.

12. Bake for 20 to 25 minutes at 350 degrees.

13. Serve and enjoy.

Chicken Broth

Chicken broth is available in supermarkets and can be found with the soup products. Chicken broth or stock can be made at home either using a high quality chicken bouillon or with a good chicken stock recipe.

Sliced Fresh Mushrooms

Fresh, frozen, and canned mushrooms are readily available. Frozen or canned will make a suitable substitute for fresh in this recipe. There are several options with fresh mushrooms including button or white mushrooms, crimini or portobello mushrooms.
