1. Turn the oven to 350 degrees and preheat.
2. In a small bowl, whisk the eggs until blended.
3. Add the bread crumbs to a shallow dish.
4. Dip the chicken in the egg, then coat with the bread crumbs and set to the side.
5. Add the olive oil to a large frying pan and heat to hot.
6. Fry the chicken until browned on all sides.
7. Transfer to paper towels to drain.
8. Add the mushrooms to the same pan with the garlic and sauté until the mushrooms are tender, which takes about 3 to 5 minutes.
9. Spray a 13 x 9 inch baking pan with nonstick cooking spray.
10. Transfer the chicken to the prepared pan.
11. Pour in the chicken broth, sauteed mushrooms and garlic over the chicken and sprinkle with shredded cheese.
12. Bake for 20 to 25 minutes at 350 degrees.
13. Serve and enjoy. |
