1. Turn the oven to 325 degrees F and preheat.
2. Season chicken breasts on both sides with coarse salt and fresh ground black pepper.
3. Toss the chicken into the cornstarch followed by an egg bath.
4. Heat oil in large skillet over medium heat. Add chicken to skillet and brown over medium-high heat.
5. Spray a 13 x 9-inch baking dish with nonstick cooking spray.
6. Arrange the chicken in the prepared dish.
7. Whisk the sauce ingredients together in a small bowl.
8. Pour the sauce over the chicken and bake for 1 hour, turning and basting the chicken every 15 minutes.
9. Serve and enjoy.
