Sweet and Sour Chicken

Boneless, skinless chicken breasts seasoned with coarse salt and fresh ground black pepper. Breasts are lightly coated in cornstarch and dipped in slightly beaten egg. Prepared chicken is browned in hot oil on stove top. Chicken is transferred to baking dish and topped with sauce prepared from white sugar, tomato ketchup, vinegar, soy sauce and garlic powder. Dish is baked until chicken is cooked thoroughly, basting every 15 minutes.

Ingredients -

3 to 4 Boneless, Skinless Chicken Breasts, cut into chunks
Salt and Pepper, to taste
1 cup Cornstarch
2 Large Eggs, slightly beaten
1/4 cup Canola or Vegetable Oil

Sauce:
3/4 cup Sugar
4 tablespoons Ketchup
1/2 cup Vinegar (preferably rice or white)
1 tablespoon Soy Sauce
1 teaspoon Garlic Powder
 
Preparation:

1. Turn the oven to 325 degrees F and preheat.

2. Season chicken breasts on both sides with coarse salt and fresh ground black pepper.

3. Toss the chicken into the cornstarch followed by an egg bath.

4. Heat oil in large skillet over medium heat. Add chicken to skillet and brown over medium-high heat.

5. Spray a 13 x 9-inch baking dish with nonstick cooking spray.

6. Arrange the chicken in the prepared dish.

7. Whisk the sauce ingredients together in a small bowl.

8. Pour the sauce over the chicken and bake for 1 hour, turning and basting the chicken every 15 minutes.

9. Serve and enjoy.

Vinegar

Vinegar comes in a wide variety of types. White vinegar and rice vinegar are common and can be found in most supermarkets. Rice vinegar may also be found with other Asian food products.

Soy Sauce

The Chinese condiment is produced by fermenting soybeans and roasted wheat in a brine solution. The result is a thin, salty brown liquid that is generally dark depending on the age of the soy sauce and additives such as caramel or molasses. Light soy sauce is also available.
