Easy Bacon Chicken Alfredo

Quick and easy chicken alfredo. Chicken, bacon, spinach and Parmesan in a creamy alfredo sauce. Chicken is served over fettuccine noodles. Goes perfect with a light salad, garlic bread, and a glass of white wine.

Ingredients -
1 (16 ounces) package Fettuccine Pasta Noodles
1 pound Thick Sliced Bacon, diced
1-1/2 pounds Boneless, Skinless Chicken Breasts, rinsed and cubed
1/3 teaspoon Salt
1/3 teaspoon Pepper
1 (16 ounces) jar Alfredo Sauce
10 ounces Fresh Chopped Baby Spinach
1/4 teaspoon Italian Seasoning
1/4 cup Grated Fresh Parmesan Cheese
 
Preparation:

1. Prepare the fettuccine, and drain noodles.

2. Cook bacon in large skillet until crisp. Remove to paper towels.

3. Reserve 3 tablespoons bacon fat.

4. Season chicken with salt and pepper.

5. Cook chicken in bacon fat over medium until chicken is cooked through.

6. Stir noodles into skillet.

7. Stir in sauce, spinach, Italian seasoning and bacon. Cook additional minute.

8. Sprinkle Parmesan cheese over top.

 


Chicken Breast Recipe Tip
Homemade Alfredo Sauce
Melt 1/2 cup butter in small sauce pan. Add 8 ounces cream cheese and whisk as you add 8 ounces half-and-half cream. Continue whisking until smooth adding 1/4 cup parmesan cheese, 1 teaspoon garlic powder and season with a pinch of fresh ground black pepper. Simmer until heated through.
