Chicken with Orange Pecan Rice

Boneless, skinless chicken breasts arranged over mixture of wild rice, seasoning mix, fresh orange juice, chopped pecans, and sweetened dried cranberries. Chicken is seasoned with paprika; dish is covered with foil and baked until cooked through.

Ingredients -
1/2 (6.2 ounces) package Fast-Cooking Long-Grain and Wild Rice Mix
1 cup Fresh Orange Juice
1/4 cup Chopped Pecans
3 tablespoons Sweetened Dried Cranberries
2 Boneless, Skinless Chicken Breasts (about 3/4 pound)
1/4 teaspoon Paprika
 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Spray an 8-inch square baking pan with nonstick cooking spray.

3. Combine 1/2 cup rice, 1/2 the rice seasoning packet, 1 cup orange juice, 1/4 cup pecans, and 3 tablespoons cranberries in a bowl and mix well.

4. Transfer the mixture to the prepared baking pan.

5. Arrange the chicken breasts on top of the rice and sprinkle with paprika.

6. Cover with aluminum foil and bake for 35 minutes.

7. Remove the foil and bake until the chicken is cooked through, which takes about 5 minutes.

8. Serve and enjoy.
