Buffalo Chicken Pizza

Chicken tenders simmered in water until cooked through. Tenders are sliced into strips and tossed in mixture of chicken broth and hot sauce. Premade pizza crusts topped with reduced-fat blue cheese dressing, layer of prepared chicken, and layer of part-skim mozzarella cheese. Pizza drizzled with hot sauce and topped with another layer of prepared chicken and mozzarella cheese. Pizza is baked until crust edge is golden and cheese is bubbly. Garnished with finely chopped celery.

Ingredients -

2 pounds Chicken Tenders
1/3 cup Hot Sauce
1/4 cup Chicken Broth
2 (10 ounces each) Thin Crust Boboli Pizza Crusts
2/3 cup Reduced-Fat Blue Cheese Dressing
1 cup Shredded Part-Skim Mozzarella Cheese
2 Celery Stalks, trimmed and finely chopped

 
Preparation:

1. Turn the oven to 450 degrees and preheat.

2. Add the chicken to a large skillet and add enough water to just cover.

3. Cover and bring the chicken to a boil.

4. Turn the heat to low and let simmer until the chicken is cooked through, which takes about 8 minutes.

5. Remove the chicken to a cutting board and slice into strips.

6. Combine the chicken broth and hot sauce in a small bowl and mix well.

7. Add the chicken to the bowl and toss well to coat.

8. Place the premade pizza crusts onto a baking sheet.

9. Spread 1/3 cup of the blue cheese dressing on top.

10. Sprinkle half of the chicken on top followed by half of the cheese.

11. Drizzle some of the hot sauce over the top.

12. Repeat the layers.

13. Bake until the cheese is bubbly and the crust is lightly browned, which takes about 10 minutes.

14. Remove the pizzas from the oven and sprinkle with chopped celery.

15. Serve and enjoy.

Hot Sauce

American hot sauce varieties are most often made with chile peppers, vinegar and salt. Some are aged to allow the sauce to ferment. Other ingredients including fruit and vegetable pulp are added for flavor, to thicken the sauces consistency and lessen the heat of the chile peppers.

Shredded Part-Skim Mozzarella Cheese

Shredded part-skim mozzarella cheese is produced from blocks of low moisture cheese. The semi-hard cheese is off white in color and available in most supermarkets. Packages of preshredded cheese are often available in addition. The low moisture block of cheese will last about a month in the refrigerator.
