Buffalo Chicken Tenders

Chicken tenders dipped in buttermilk and dredged in flour seasoned with coarse salt and fresh ground black pepper. Tenders are browned on the stove top in hot oil and finished in the oven on baking sheet. Baked tenders are tossed in mixture of melted butter and hot sauce. Serve with dip prepared from crumbled blue cheese and low-fat buttermilk.

Ingredients -

1 cup (about 4 ounces) Crumbled Blue Cheese
1 cup Low-Fat Buttermilk
Coarse-Grained Salt
Fresh Ground Black Pepper
1 cup All-Purpose Flour
1-1/2 pounds Chicken Tenders
1/2 cup Vegetable Oil
1/3 cup Hot Sauce
2 tablespoons Melted Butter

 
Preparation:

1. Turn the oven to 250 degrees and preheat.

2. On a rimmed baking sheet, place a wire rack and place in the oven.

3. Mix together the blue cheese and 1/2 cup buttermilk in a medium bowl.

4. Add as much salt and pepper as desired and set aside.

5. In 2 separate bowls, place the flour and remaining buttermilk.

6. Season both bowls with salt and pepper.

7. Set out an additional rimmed baking sheet.

8. Dip the chicken into the buttermilk then dredge in the flour.

9. Place the coated chicken onto the baking sheet.

10. Add the vegetable oil to a large skillet and heat over medium-high heat.

11. Fry the chicken until golden (in batches), which takes about 4 minutes per side.

12. Transfer the fried chicken to the wire rack that has been preheated in the oven.

13. Whisk together the melted butter and hot sauce in a large bowl.

14. Add the fried chicken and toss well to coat.

15. Serve with the reserved dip.

Crumbled Blue Cheese

There are a number of varieties of blue cheese including Roquefort, Blue Stilton and Gorgonzola. The cheese, which gets its name from the veins of color throughout the cheese created from mold that is introduced into the cheese. Blue cheese, made from cow's milk, sheep's milk, or goat's milk has a distinctive flavor unlike other cheeses. The flavor of blue cheeses tends to be sharp and a bit salty.

Low-Fat Buttermilk

Produced commercially, buttermilk is available in most supermarkets, and is a fall holiday favorite. The specialty dairy product is prepared by adding a lactic acid bacteria culture to milk. Some dairies add bits of butter to the mixture to recreate the look and taste of traditional buttermilk, made centuries ago, created when cream was allowed to separate from milk before churning the cream into butter. The leftover milk would ferment during the process, naturally creating buttermilk.
