Chicken Mole Tostadas with Avocado Cream

Cooked and shredded chicken breast combined with mole sauce, chopped fresh cilantro leaves, minced red onion, and fresh lime juice. Mixture is spooned over tortilla chips and topped with avocado cream prepared from avocado, mayonnaise, fresh lime juice, coarse salt, and fresh ground black pepper.

Ingredients -

1 cup Reduced Sodium Chicken Broth
1/3 cup Pumpkin Seed Sauce or Mole Sauce (8.25 ounces jar)
3 cups Shredded Cooked Chicken
1/2 cup Chopped Fresh Cilantro Leaves, for garnish
1/4 cup Minced Red Onion
3 tablespoons Fresh Lime Juice
48 Tortilla Chips
Avocado Cream (recipe follows)

 
Preparation:

1. In a medium saucepan, add the broth and mole sauce and whisk until well combined.

2. Bring to a gentle boil then remove the pan from the heat.

3. To a large bowl, add the chicken, mole sauce, cilantro, onion and lime juice and mix well.

4. Arrange the tortilla chips on a serving platter and top each chip with 1 tablespoon of the chicken mixture followed by 1/4 teaspoon of the avocado cream.

5. Garnish with a cilantro leaf.

Avocado Cream:

1. Remove the avocado from the shell and mash into a small bowl.

2. Add 1 tablespoon mayonnaise, 1 tablespoon lime juice, 1/4 teaspoon salt, 1/4 teaspoon pepper and mix well.

Mole Sauce

Mole is a term used to describe a number of sauces in Mexican cuisine. These thick, rich, sauces are prepared from roasted ingredients that are ground into a fine powder or a fine paste. The powder or paste is mixed with broth or water and simmered until it reaches the desired consistency. Mole creation starts with chile peppers such as ancho chile peppers and chipotle peppers.
