Chicken Satay with Mango Salsa

Chicken tenders are arranged on skewers and basted with marinade prepared from satay sauce, fresh lime juice, coarse salt, and fresh ground black pepper. Chicken satay and raw green onion are grilled over medium heat. Satay served with mango salsa prepared from peeled and cubed mango, finely chopped red onion, minced grilled green onion, and vegetable oil.

Ingredients -

1/3 cup Satay Sauce
4 tablespoons Fresh Lime Juice
1/2 teaspoon Coarse Salt
1/2 teaspoon Fresh Ground Black Pepper
2 pounds Chicken Tenders
1 bunch Green Onions
3 Large Mangoes, peeled and flesh cut into cubes
1/3 cup Finely Chopped Red Onion
1 tablespoon Vegetable Oil

 
Preparation:

1. Turn the grill to medium heat.

2. In a bowl, mix together the satay sauce, 2 tablespoon lime juice, 1/4 teaspoon salt and 1/4 teaspoon pepper.

3. Thread the chicken tenders onto the skewers then baste with the marinade.

4. Place the skewers on the grill and cook until the chicken is no longer pink, which takes about 5 minutes per side.

5. During the last 3 minutes, place the green onion on the grill.

6. Whisk together the remaining ingredients in a large bowl.

7. Remove the chicken skewers and green onions from the grill.

8. Thinly slice the green onions and stir half into the mango relish.

9. Serve the skewers with the mango relish and sprinkled with the remaining green onion.
