Crispy Chicken Fingers with Honey Mustard Sauce

Boneless chicken breast strips soaked in buttermilk are seasoned with sea salt and fresh ground black pepper and dredged in cornflake cereal crumbs. Prepared chicken fingers are arranged on baking sheet and baked in hot oven until cooked through and crust is golden brown. Chicken fingers served with honey-mustard sauce.

Ingredients -

1-1/4 pounds Boneless, Skinless Chicken Breasts cut across into 1/2-inch pieces
1/2 cup Low-Fat Buttermilk
Cooking Spray
4 cups Whole-Grain Corn Flake Cereal
1/4 teaspoon Sea Salt
Fresh Ground Black Pepper

Honey-Mustard Sauce:
1/2 cup Dijon Mustard
1 tablespoon Mayonnaise
3 tablespoons Honey

 
Preparation:

1. Turn the oven to 400 degrees and preheat.

2. In a shallow baking dish, combine the buttermilk and chicken.

3. Cover with plastic wrap and refrigerate for 1 hour.

4. Spray a rimmed baking sheet with nonstick cooking spray.

5. Add the cereal to a large Ziploc bag, seal and crush with a rolling pin.

6. Pour the crumbs into a shallow dish.

7. Sprinkle both sides of the chicken with salt and pepper.

8. Dip each piece of chicken into the cereal, coating well and arrange on the prepared baking sheet.

9. Bake for 8 minutes or until cooked through.

10. Allow the chicken to cool slightly then serve with the mustard sauce.

Honey-Mustard Sauce

1. Whisk together the mustard and mayo until smooth in a small bowl.

2. Add the honey and stir well to blend.
