Crispy Coconut Chicken Fingers

Boneless, skinless chicken breast strips dipped in egg and dredged in mixture of sweetened flaked coconut, flour, coarse salt, fresh ground black pepper and garlic powder. Prepared chicken fingers are arranged on baking sheet, drizzled with melted butter and baked in hot oven until cooked through and crust is golden brown.

Ingredients -

1 cup Sweetened Flaked Coconut
1/2 cup Flour
1/2 teaspoon Coarse Salt
1/4 teaspoon Fresh Ground Black Pepper
1/4 teaspoon Garlic Powder
1-1/2 pounds Boneless, Skinless Chicken Breast Halves, cut into 1" strips
1 Large Egg, lightly beaten
1/3 cup Butter, melted

 
Preparation:

1. Turn the oven to 400 degrees and preheat.

2. In a medium bowl, combine the first 5 ingredients and mix well.

3. Dip the chicken into the egg bath, and then dredge in the coconut mixture.

4. Add the chicken strips to a shallow baking dish and drizzle with the melted butter.

5. Bake until browned on both sides and cooked through, which takes about 35 to 30 minutes.

6. Serve with favorite dipping sauce.

Sweetened Flaked Coconut

Sweetened flaked coconut is white coconut flesh that has been dried and sweetened. The sweetened flakes are packaged in plastic bags and sold in supermarkets, alongside products used for creating baked goods. Store the coconut in an airtight container in the pantry, or another, cool, dry location and it will keep well for months.

Garlic Powder

Garlic powder is produced from garlic cloves that have been dehydrated and ground into a powder. Look for a high quality brand and check the label to ensure that it is pure garlic with no additional ingredients.
