Chicken and Cheese Tortellini Cacciatore

Chicken sauteed in oil with bell pepper, onion, garlic, tomatoes, and tomato sauce, Chicken is tossed with cheese tortellini pasta and served piping hot.

Ingredients -
1 tablespoon Extra Virgin Olive Oil
1 pound Boneless, Skinless Chicken Breasts, cut into small pieces
1 large Green Bell Pepper, chopped
1 medium White Onion, chopped
1 cup Water
1 Clove Garlic, minced
1 (14 ounces) can Diced Tomatoes
1 (8 ounces) can Tomato Sauce
1 (9 ounces) package Cheese Tortellini
 
Preparation:

1. In large non-stick saute pan or cast iron skillet, heat oil over medium heat.

2. Add chicken, bell pepper, and onion. Stirring frequently, cook until chicken begins to brown.

3. Add water, garlic, tomatoes and tomato sauce. Bring cacciatore to a boil.

4. Toss tortellini in with chicken cacciatore. Stir to coat tortellini with sauce.

5. Cover pan and cook additional 15 minutes, stirring frequently.

Cheese Tortellini
Tortellini are a ring shaped pasta stuffed with meats and cheeses. Cheese tortellini can be found packaged fresh and frozen at your local supermarket. Cheese ravioli would be a good substitute for the tortellini.
