Chicken and Ravioli Cacciatore

Cheese ravioli combined with sautéed chopped white onion, chopped bell pepper, boneless chicken breast pieces, diced tomatoes with garlic, and tomato sauce. Dish is heated in heavy skillet over medium heat until ingredients are cooked through and sauce has thickened.

Ingredients -

1 tablespoon Extra Virgin Olive Oil
1 pound Boneless, Skinless Chicken Breasts Halves, cut into 1" pieces
1 White Onion, chopped
1 Green Bell Pepper, chopped
1 cup Water
1 (14 ounces) can Diced Tomatoes with Garlic, undrained
1 (8 ounces) can Tomato Sauce
1 (9 ounces) package Refrigerated Cheese-Filled Ravioli or Tortellini

 
Preparation:

1. Add the olive oil to a large heavy skillet and heat over medium.

2. Add the onion, bell pepper and chicken pieces and cook until the chicken browns.

3. Add the tomatoes, water and tomato sauce and bring the mixture to a boil.

4. Add the ravioli and toss to cover with the tomato sauce.

5. Make sure the raviolis are separated.

6. Cook for 13 to 15 minutes, covered, or until the sauce begins to thicken and the chicken and ravioli are cooked through, stirring frequently.

7. Serve immediately.
