Chicken Noodle Casserole

Sautéed onion spooned into casserole dish and topped with mixture of chicken pieces, sour cream, cream of chicken soup, cream of mushroom soup, shredded cheddar cheese, and egg noodles. Casserole topped with crushed Ritz crackers, shredded cheddar cheese, and baked until noodles have softened and crust is golden brown.

Ingredients -

1 Large White Onion, diced
1/4 cup Butter
3 (10 ounces each) cans Chicken Chunks
1 (16 ounces) container Sour Cream
1 can Cream of Chicken Soup
1 can Cream of Mushroom Soup
3 cups Shredded Cheddar Cheese
1 (8 ounces) package Uncooked Egg Noodles
4 ounces Buttery Round Crackers, crushed

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Melt the butter in a medium skillet and sauté the onion until just softened.

3. Pour the onion into a 13x9-inch baking dish.

4. Combine the chicken, soup and sour cream in a large bowl and stir well to blend.

5. Add 2 cups of cheese and the egg noodles and stir well.

6. Pour the soup mixture over the onions in the pan.

7. Sprinkle the crushed crackers on top followed by the remaining 1 cup of cheese.

8. Bake until the noodles are soft and the top is golden brown, which takes about 30 minutes.

White onions, like yellow onions are also referred to as storage onions. Uncut, a white onion will last months when stored. Once cut the onion must be refrigerated and will begin breaking down within a week or two, and need to be replaced.
