Chicken Tetrazzini

Boneless, skinless chicken breast pieces combined with mushrooms, sour cream, condensed cream of chicken soup, chopped onion, celery salt, chopped pimiento, and cooked spaghetti pasta noodles spooned into prepared baking dish. Casserole is topped with grated sharp cheddar cheese, grated fresh parmesan cheese and baked until sauce is bubbly and top is golden brown.

Ingredients -

4 Boneless, Skinless Chicken Breast Halves, cooked and cut into small pieces
2 (4 ounces each) cans Mushrooms
1 pint Sour Cream
2 cans Condensed Cream of Chicken Soup
1/4 cup Chopped White or Yellow Onions sauteed in 1-tablespoon Butter until tender
1/2 teaspoon Celery Salt
1 small jar Chopped Pimientos
1 pound Thin Spaghetti, cooked and drained
1-1/2 cup Grated Sharp Cheddar Cheese
1/2 cup Grated Fresh Parmesan Cheese

 
Preparation:

1. Combine the first 7 ingredients in a large bowl and mix well.

2. Stir in the spaghetti.

3. Transfer to a 13 x 9 inch glass baking dish that you sprayed with nonstick cooking spray.

4. Sprinkle the cheddar cheese on top followed by the grated parmesan cheese.

5. Bake for 45 to 50 minutes at 300 degrees, or until the top is golden and the insides are bubbly.

Pimento

Jarred pimento is pickled pimento pepper or cherry pepper. The large chile pepper is similar to red bell pepper, but with a little bit of heat. The pimento chile pepper is very mild, and has one of the lowest ratings on the scoville pepper scale for measuring how hot chile peppers are in terms of their capsaicin levels.

Thin Spaghetti

The thin spaghetti pasta shape is available in most supermarkets with the other pasta. You could certainly substitute regular spaghetti noodles, or angel hair pasta, a slightly thinner pasta.
