Chicken Parmesan

Chicken Parmesan is a variation of the classic Eggplant Parmagiana which originated in the southern region of Italy. The standard recipe calls for shallow-fried pieces of breaded chicken covered with a marinara sauce and baked to perfection. The dish is topped with cheese, generally either Mozzarella, Parmesan or a combination of the two. Chicken Parmesan is popular pub fare in Australia where it is known as parmey or parma. In England, it is called Parmo and features either chicken or pork. Across the United States, Chicken Parmesan can be found on restaurant menus served with pasta or in sandwich shops served on fresh rolls.

There are many ways to make Chicken Parmesan. Lighter recipes call for chicken breasts and omit the fatty dark meat, leave off the breading and bake the chicken instead of frying it. Some cooks add vegetables like onion, bell peppers and whole tomatoes to the mix. Other recipes call for chicken cutlets or slices of boneless chicken instead of bone-in pieces to assist in the sandwich making process. Whether serving on top a bed of pasta or spreading over a crusty sub roll, Chicken Parmesan is a classic dish that is as appealing to the eye as it is to the palate.
