Baked Garlic Parmesan Chicken

Boneless, skinless chicken breasts dipped in mixture of minced garlic and extra-virgin olive oil and dredged in mixture of dry bread crumbs, grated fresh parmesan cheese, fresh ground black pepper, and dried basil leaves. Prepared chicken arranged in baking dish and topped with remaining cheese mixture. Dish is baked until chicken is cooked through and crust is golden brown.

Ingredients -

2 tablespoons Extra-Virgin Olive Oil
1 Garlic Clove, minced
1 cup Dry Bread Crumbs
2/3 cups grated Fresh Parmesan Cheese
1 teaspoon Dried Basil Leaves
1/4 teaspoon Fresh Ground Black Pepper
6 Boneless, Skinless Chicken Breasts

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Spray a 9 x 13 inch baking dish with nonstick cooking spray.

3. Combine the garlic and olive oil in a bowl and mix well.

4. Combine the Parmesan cheese, bread crumbs, pepper and basil in another bowl.

5. Dredge the chicken in the olive oil mixture then into the bread crumb mixture.

6. Place the chicken in the baking dish and pour the rest of the bread crumb mixture on top.

7. Bake until the chicken is cooked through, which takes about 30 minutes.

Using Fresh Chicken

Fresh chicken will deliver the best results. Freezing chicken works very well, and is a great time and money saver, but chicken can lose moisture during the thawing process, resulting in meat that is potentially less tender than when using fresh chicken.
