Chicken Parmesan

Boneless, skinless chicken breasts dipped in egg and dredged in mixture of grated fresh parmesan cheese and seasoned bread crumbs. Prepared chicken sautéed in hot vegetable oil until well browned. Breasts are arranged over marinara sauce in baking dish, and topped with slices of fresh mozzarella cheese. Dish is baked until cheese has melted.

Ingredients -

2 Large Eggs, beaten
1 cup Grated Fresh Parmesan Cheese
7 ounces Seasoned Bread Crumbs
6 Boneless, Skinless Chicken Breast Halves
1 tablespoon Vegetable Oil
1 jar Marinara Sauce
6 Fresh Mozzarella Cheese Slices

 
Preparation:

1. Turn the oven to 375 degrees and preheat.

2. Combine the bread crumbs and parmesan cheese in a shallow dish.

3. Dip the chicken breast halves into the beaten egg then into the parmesan/bread crumb mixture coating completely.

4. Add the oil to a large skillet and heat over medium-high heat.

5. Fry the chicken 8 to 10 minutes per side or until the internal temperature of the chicken is 165 degrees.

6. Spray a 13 x 9 inch casserole baking dish with nonstick cooking spray.

7. Pour the marinara sauce into the bottom and spread out evenly.

8. Arrange the fried chicken in the bottom and top with the slices of mozzarella cheese.

9. Bake until the cheese is melted, which takes about 20 minutes.

10. Serve with hot cooked pasta.

Marinara Sauce

Marinara sauce is a simple tomato based sauce with a few additional ingredients including minced garlic, fresh herbs, and chopped onion. The sauce is simmered over low heat until the ingredients have broken down and flavors have melded. Variations on the sauce include adding olives, capers, and additional spices.

Chicken Skin

Chicken skin is calorie rich, and fatty. For healthier dishes the skin is often removed. However, cooking with the skin on will trap moisture in the chicken while it is being cooked. Consider leaving the skin on until the chicken has finished cooking before removing and discarding.
