Italian Chicken Parmesan

Boneless, skinless chicken breasts dipped in beaten egg and dredged in mixture of bread crumbs, grated fresh parmesan cheese, Italian seasoning, coarse salt, and fresh ground black pepper. Coated chicken breasts arranged in prepared slow cooker, topped with marinara sauce, mozzarella cheese slices and cooked a few hours on high to cook chicken through. Served hot over pasta noodles.

Ingredients -

2 Boneless, Skinless Chicken Breast Halves
1/2 cup Bread Crumbs
1/4 cup Parmesan Cheese
1/2 teaspoon Italian Seasoning
1/4 teaspoon Fresh Ground Black Pepper
1/4 teaspoon Kosher Salt
1 tablespoon Olive Oil
1 Egg, beaten
Mozzarella Cheese Slices
Marinara Sauce

 
Preparation:

1. Add one tablespoon of olive oil to the bottom of your crock pot and spread around.

2. Add the egg to a bowl and whisk until fluffy.

3. In a shallow dish, combine the bread crumbs, parmesan cheese, Italian seasoning, salt, and pepper. Mix well.

4. Dip the chicken breasts into the egg, then dredge in the bread crumb mixture.

5. Transfer the chicken to the prepared crock pot and place 2 to 3 slices of mozzarella on top.

6. Pour the jar of marinara on top and close the lid.

7. Cook for 3 to 4 hours on HIGH.

8. Serve with pasta and enjoy.

Italian Seasoning

Italian seasoning can be found with the other jarred dried herbs and spices in the spices section of your supermarket. Italian seasoning can be made at home using common dried herbs. It is a blend of 2 tablespoons each: dried basil, dried marjoram, dried oregano, dried rosemary, dried thyme and 1 tablespoon of dried sage. Store in an airtight jar or container in a cool, dry location.

Preparing Raw Chicken

Prepare raw chicken away from other foods and always clean everything that has come in contact with raw chicken before handling or introducing other foods to those areas. Hot soapy water or a mix of water with bleach will kill bacteria and avoid any possible passing of bacteria from raw chicken to other foods.
