Stuffed Pasta

Stuffed pasta such as ravioli, tortellini, and gnocchi are unleavened dough formed into very thin pasta. The pasta is cut and filled, leaving a small amount of space for the dough to be closed around the filling. These products are available in stores and fine specialty shops and can be fun to make at home.

Pasta Dough

Pasta is prepared from unleavened dough produced from various type of wheat. While pasta is available for purchase in many shapes and sizes, most pasta begins as a thin sheet of pasta dough. Some pasta is created the old fashioned way of being extruded, or pushed out through a machine into long thin shapes.
