Chicken Lasagna Florentine

Lasagna noodles layered with two mixtures, one consisting of diced cooked chicken, chopped spinach, Italian seasoning, ground nutmeg, eggs, and shredded mozzarella, and the other a white sauce prepared with butter, all-purpose flour, garlic powder, chicken bouillon, half-and-half, grated fresh parmesan cheese and Romanoff cheese. Lasagna is topped with mozzarella cheese and baked until bubbly.

Ingredients -

9 Lasagna Noodles, cooked and drained
1 (10 ounces) Frozen Chopped Spinach, drained
2 cups Diced Chicken
1-1/2 teaspoons Italian Seasoning
Nutmeg, to taste
2 Large Eggs
1/2 cup Shredded Mozzarella Cheese

White Sauce:
1/4 cup Butter
1/4 cup All-Purpose Flour
2 teaspoons Garlic Powder
1 Chicken Bouillon
2 cups Half-and-Half
1/4 cup Grated Fresh Parmesan Cheese
1/4 cup Romanoff Cheese

4 ounces Mozzarella Cheese, for top of lasagna at the end

 
Preparation:

1. Cook the lasagna noodles according to the package directions and drain.

2. Combine the next 6 ingredients in a bowl and mix well.

3. Melt the butter in a sauté pan over low heat.

4. Add the next 4 ingredients, stirring well.

5. Remove the pan from the heat and add the cheeses.

6. Stir the contents with a wooden spoon until the cheeses have melted and the sauce is thick and creamy.

7. Remove the pan from the heat.

8. Rub a 13 x 9 pan with butter.

9. Layer 3 noodles, 1/2 of chicken-spinach mixture and 1/3 of White Sauce.

10. Repeat the layers ending with the white sauce.

11. Bake lasagna at 350 degrees for 25 minutes.

12. Sprinkle 4 ounces ofMozzarella cheese on top and bake for 5 to 10 minutes or until melted.

Working with Pasta

When making Italian style pasta recipes with sauces you should not rinse the pasta. The starch in the pasta helps the sauce to adhere to the outside surface, and rinsing lessens its ability to do so. When working with large, wide pasta noodles like lasagna, sometimes rinsing the noodles will keep them from tearing.

Lasagna noodles are the exception to the rule when rinsing noodles are cooking for use with host sauces. The lasagna noodles will have a tendency to stick together and tear if they are not rinsed, a result of the starch that is in the noodles. Pasta noodles, in general, combine better with sauces if they are moist and if the starch that is present in the noodles is on their outer surfaces.
