Chicken Manicotti

Manicotti shells stuffed with chicken coated in garlic powder. Stuffed shells are arranged in baking dish over spaghetti sauce and topped with cooked sausage, fresh sliced mushrooms, and more sauce. Mozzarella cheese sprinkled on top of sauce and dish is baked until noodles are soft and sauce is bubbly.

Ingredients -

3/4 pound Boneless Skinless Chicken Breast, cut into ½ inch cubes
1-1/2 teaspoons Garlic Powder
7 Uncooked Manicotti Shells
1 (30 ounces) jar Spaghetti Sauce, divided
1/4 pound Sausage, cooked and drained
1/4 pound Fresh Sliced Mushrooms
2 cups Shredded Mozzarella Cheese
1/3 cup Water

 
Preparation:

1. In a mixing bowl, combine the chicken and garlic powder and toss to coat.

2. Stuff the chicken into the manicotti shells.

3. Pour 1 cup of spaghetti sauce evenly over the bottom of a 7 x 11 baking pan.

4. Arrange the stuffed shells on top of the sauce in the pan.

5. Sprinkle the sausage and mushrooms over the top, followed by the remaining sauce.

6. Sprinkle the mozzarella on top and spoon water around the edge of the dish for moisture.

7. Cover and bake at 375 for 65-70 minutes.

Well known cuts of tubular pasta include macaroni (or elbow), manicotti, penne, and rigatoni. Tubular pastas are usually served in dishes where bits and pieces of sauces or dressings can get trapped inside the pasta. Tubular pastas come in a wide variety of shapes and sizes. Consider the other ingredients in your dish when choosing a pasta shape and type.

Warming the Plates and Serving Bowls

Warming the serving bowl and plates will keep pasta hotter longer. You can pour some hot water into the serving bowl and pour it out just before adding hot pasta. Place oven safe plates in a 200 to 250 F oven and warm for 10 minutes prior to serving.
