Springtime Pasta

Cavatappi shape pasta tossed with sautéed chicken breast pieces, diced yellow bell pepper, fresh asparagus, halved cherry tomatoes, herb cheese, coarse salt, and fresh ground black pepper.

Ingredients -

1 pound Cavatappi Pasta
1 tablespoon Extra Virgin Olive Oil
1-1/2 pounds Boneless Skinless Chicken Breast Halves, cut into 1 inch pieces
1 Yellow Bell Pepper, cored and diced
1 pound Fresh Asparagus, trimmed and cut into 2 inch pieces
1 pint Cherry Tomatoes, halved
1 (5 ounces) package Spreadable Herb Cheese
1/4 teaspoon Coarse Salt
Fresh Ground Black Pepper

 
Preparation:

1. Add the pasta to a large pot of slightly salted water and bring to a boil.

2. Cook until almost al dente, add the asparagus and cook for an additional 2 minutes.

3. Add oil to a hot skillet, tilting the pan to coat evenly with oil.

4. Add the chicken and sauté for 6 minutes, occasionally stirring.

5. During the last 2 minutes of cooking time, add the yellow pepper and sauté.

6. Remove the pan from the heat.

7. Scoop out 1/4 cup pasta water, then drain the pot.

8. In a large serving bowl, combine everything, adding the remaining ingredients and stir until well blended and the cheese is melted.

9. Serve with garlic bread and enjoy.

Fresh Asparagus

Look for fresh asparagus spears that are firm, straight, and closed, compact tips. For consistency in cooking choose a bundle of spears that are the same thickness. Thicker spears will have be more succulent and tender than thin spears, if the lower woody portion of the thick spear is removed, but they will cost more, as asparagus is priced per pound.

Cherry Tomatoes

Cherry tomatoes are available in supermarkets and farmers markets. They are small tomatoes, generally round and slightly smaller than a golf ball in size. The small tomatoes are usually packaged in a plastic basket containing upwards of two dozen tomatoes. Cherry tomatoes are considered a juicy tomato, are delicious eaten raw.
