1. Combine the stir fry sauce and the ramen noodle seasoning packet with the ginger and mix well.
2. Set the mixture to the side.
3. Prepare the noodles according to the directions on the package.
4. Drain.
5. Add the chicken to a skillet of hot oil and stir fry for 5 minutes.
6. Add the vegetables and stir fry for an additional 2 minutes.
7. Add the noodles and heat through, which takes about 3 minutes.
8. Pour the sauce over the noodles and add the cashews.
9. Stir fry for a few minutes more until the sauce is mostly absorbed.
