Three Cheese Chicken Penne Florentine

Casserole style pasta dish featuring sautéed mushrooms, chopped onion, chopped red bell pepper, fresh spinach, chopped fresh oregano, fresh ground black pepper, shredded roasted chicken breast, shredded reduced-fat sharp cheddar cheese, reduced-fat milk, cream of chicken soup, and penne pasta.

Ingredients -

1 teaspoon Olive Oil
Cooking Spray
3 cups Thinly Sliced Mushrooms
1 cup Chopped Onion
1 cup Chopped Red Bell Pepper
3 cups Chopped Fresh Spinach
1 tablespoon Chopped Fresh Oregano
1/4 teaspoon Fresh Ground Black Pepper
1 (16 ounces) carton 2% Low-Fat Cottage Cheese
4 cups Hot Cooked Penne (about 8 ounces uncooked tube-shaped pasta)
2 cups Shredded Roasted Boneless, Skinless, Chicken Breast
1 cup (4 ounces) Shredded Reduced-Fat Sharp Cheddar Cheese, divided
1/2 cup (2 ounces) Grated Fresh Parmesan Cheese, divided
1/2 cup 2% Reduced-Fat Milk
1 (10-3/4 ounces) can Condensed Reduced-Fat, Reduced-Sodium Cream of Chicken Soup, undiluted

 
Preparation:

1. Turn the oven to 425 degrees and preheat.

2. Add the olive oil to a large skillet and spray with nonstick cooking spray.

3. Heat over medium-high heat.

4. Stir in the thinly sliced mushrooms, chopped onion, and chopped red bell pepper. Sauté until tender, which takes about 4 minutes..

5. Add spinach, oregano, and black pepper and sauté until the spinach wilts, which takes about 3 minutes.

6. Add the cottage cheese to a food processor or blender and process until smooth.

7. Combine the cottage cheese, spinach mixture chicken, pasta, 3/4 cup cheddar cheese, 1/4 cup Parmesan cheese, cream of chicken soup and milk in a large bowl and mix well.

8. Spray a 2 quart baking dish with nonstick cooking spray.

9. Transfer the mixture into the baking dish and sprinkle with the remaining cheeses.

10. Bake for 25 minutes in the preheated oven.

11. Serve and enjoy.

 


Chicken Breast Recipe Tip
Hot Cooked Penne pasta

Never add oil to pasta water. If you will be tossing your pasta with sauce, the oil will coat the pasta and keep the sauce from adhering. The starch in pasta helps sauce to adhere. For best results add pasta a pot of boiling water with ample room for the pasta to move around, give it a stir occasionally, and check to see if the pasta is done cooking after 4 to 5 minutes, and every minute after that until it reaches a state of being firm, but tender.
