Three Cheese Chicken Penne Pasta Bake

Delicious casserole style pasta dish featuring sautéed chicken breast pieces, basil leaves, spinach leaves, diced tomatoes, Neufchatel cheese, grated fresh parmesan cheese, shredded mozzarella cheese, spaghetti sauce, and multi-grain penne pasta.

Ingredients -
1-1/2 cups Multi-Grain Penne Pasta, uncooked
1 (9 ounces) package Spinach Leaves
1 teaspoon Dried Basil Leaves
1 (14 ounces) jar Spaghetti Sauce
1 (14 ounces) can Diced Tomatoes, drained
2 ounces Neufchatel Cheese, cubed
1 cup Shredded Mozzarella Cheese
2 tablespoons Grated Fresh Parmesan Cheese
1 pound Boneless, Skinless Chicken Breasts, cut into bite size pieces
 
Preparation:

1. Turn the oven to 375 degrees and preheat.

2. Cook the pasta until almost al dente and add the spinach during the last minute of boiling.

3. Add the chicken and basil to a skillet and sauté for 3 minutes.

4. Add the tomatoes and sauce and bring the mixture to a boil.

5. Simmer until the chicken is done which takes about 3 minutes.

6. Add the cream cheese and pasta/spinach mixture and stir until the cheese melts.

7. Add the chicken mixture and 1/2 cup of mozzarella and toss.

8. Spoon into 2 quart baking dish.

9. Bake for 20 minutes in the preheated oven.

10. Sprinkle with the remaining cheeses.

11. Bake 3 additional minutes and serve.

When making fresh pasta check the “sell by” date of the eggs you will be using to ensure freshness. If purchasing fresh pasta at the supermarket, note that it also has a “sell by“ date that can be a good guide to its freshness. If you are using fresh pasta in place of dried pasta, note that dried pasta nearly doubles in volume when cooked.
