Chicken and Basil Pesto Pot Pie with Roasted Red Pepper

Homemade pot pie features filling prepared from chopped rotisserie chicken, pesto sauce mix, mixed vegetables, all-purpose flour, unsalted butter, grated fresh parmesan cheese, half-and-half, Montreal chicken seasoning and roasted red bell peppers. Filling topped with garlic bread stick dough crust. Pot pie is baked in hot oven until top crust is golden and filling is bubbly.

Ingredients -

2 cups Chopped Cooked Chicken Breast
1 (.5 ounces) package Pesto Sauce Mix
1 (16 ounces) bag Frozen Mixed Vegetables, thawed
1 tablespoon All-Purpose Flour
2 teaspoons Unsalted Butter
1 (11 ounces) tube Refrigerated Garlic Bread stick Dough
1/2 cup Grated Fresh Parmesan Cheese
1 cup Half-and-Half or Light Cream
1 (10.75 ounces) can Condensed Cream of Celery Soup
1 teaspoon Montreal Chicken Seasoning
1/4 cup jarred Roasted Red Bell Peppers, drained, chopped

 
Preparation:

1. Turn the oven to 425 degrees and preheat.

2. Spray a 9 inch deep dish pie plate with nonstick cooking spray.

3. Melt the butter in a saucepan over medium-high heat.

4. Add the flour, chicken seasoning and peppers and cook for 30 seconds, constantly stirring.

5. Add the soup and vegetables and bring to a boil.

6. Reduce the heat and cook until thickened, which takes about 5 minutes.

7. Remove the pan from the heat, stir in the chicken, cheese, pesto mix and half and half.

8. Pour the chicken mixture into the prepared pie plate.

9. Unroll and separate the bread stick dough, leaving the short ends connected.

10. Wind the strips of dough into circles over the chicken mixture, making a flower shape.

11. Bake until the sauce is bubbling and the bread is nice and golden brown, which takes about 15 minutes.

12. Remove the pie from the oven and allow to stand for 10 minutes.

13. Serve and enjoy.

The “sell-by” date indicates that the chicken should remain fresh for 2 to 3 days beyond this date, if properly refrigerated.
