Easy Chicken Pot Pie

Pot pie filling prepared from condensed cream of chicken soup, frozen mixed vegetables, and cooked chicken. Filling is spooned into glass pie pan and topped with homemade crust prepared from whole milk, egg, and all-purpose baking mix. Pot pie is baked in hot oven until filling is bubbling and crust is golden brown.

Ingredients -

1 (10-3/4 ounces) can Condensed Cream of Chicken Soup
1 (9 ounces) package Frozen Mixed Vegetables, thawed
1 cup Cubed Cooked Chicken or Turkey
1/2 cup Milk
1 Egg
1 cup All-Purpose Baking Mix

 
Preparation:

1. Turn the oven to 400 degrees and preheat.

2. Combine the cream of chicken soup, frozen mixed vegetables and cooked chicken in a bowl and mix well.

3. Transfer the mixture into a 9 inch pie plate.

4. In a small bowl, combine the egg, milk and baking mix and whisk well to combine.

5. Spread the batter on top of the chicken filling.

6. Bake until the top is golden brown, which takes about 30 minutes.

Poaching chicken breast in water results in chicken that is very tender when cooked. For added flavor, add some dried herbs to the liquid such as tarragon or rosemary, some minced fresh vegetables such as garlic or onion, or add some lemon juice or dry white wine to the liquid and change the flavor and texture of the cooking chicken.
