Old Fashioned Chicken Pot Pie

Prepared pie crust filled with mixture of cooked and chopped boneless chicken breast, chopped white onion, cream of chicken soup, mixed vegetables, sour cream, coarse salt, and fresh ground black pepper. Top crust is placed over filling and pot pie is baked until crust is golden and filling is bubbly.

Ingredients -

Double Crust for a 9-inch pie
2 to 3 Boneless, Skinless Chicken Breasts, cooked and chopped
1/2 White Onion, chopped
1 (10-3/4 ounces) can Cream of Chicken Soup
1 (15 ounces) can Mixed Vegetables, drained
1/2 cup Sour Cream
Coarse Salt and Fresh Ground Black Pepper, to taste

 
Preparation:

1. Place one of the pie crusts into a 9 inch pie plate.

2. In a large bowl, combine the chicken, onion, soup, mixed vegetables, sour cream and salt and pepper to taste and mix well.

3. Pour the mixture into the pie shell.

4. Place the second crust on top, crimp and seal the edges.

5. Cut a few slits in the top to allow the steam to escape.

6. Bake for 35 to 40 minutes in a 350 degree oven, or until golden brown.

Seal the Pie Crust

Seal your pie crust and prevent a soggy crust when it is filled by brushing egg white on the pie crust surface. The egg white will seal the crust and where the crust is exposed along the edges, it will have a beautiful, glossy finish. Simply beat an egg white in a small bowl with a fork and use a pastry brush to apply liberally to the crust. Allow to dry.

When poaching chicken you can add a lot of extra flavor by adding fresh or dried herbs, and minced vegetables to the cooking liquid. Try herbs such as tarragon, dill, thyme, sage, and rosemary. Try mincing some fresh garlic, onion or ginger and add to it the liquid.
