Chicken Salad Stuffed Tomatoes

Heirloom tomatoes stuffed with mixture of cooked chicken breast, corn, minced red bell pepper, minced red onion tossed in dressing prepared from extra-virgin olive oil, fresh lemon juice, chopped fresh Italian flat-leaf parsley, Dijon mustard, real mayonnaise, fresh ground black pepper and sea salt.

Ingredients -

6 Large Heirloom or Beef Steak Tomatoes
2 cups Cooked and Cubed Chicken
1/2 cup Minced Red Bell Pepper
1/2 cup Corn, drained
1-1/2 tablespoons Minced Red Onion
1/4 cup plus 2 tablespoons Extra-Virgin Olive Oil
1/4 cup Fresh Lemon Juice
1 tablespoon Chopped Fresh Italian Flat-Leaf Parsley
1 tablespoon Dijon Mustard
1 tablespoon Mayonnaise
1 teaspoon Fresh Ground Black Pepper
1/2 teaspoon Sea Salt
Leaf Lettuce or Spinach Leaves

 
Preparation:

1. The top 1/2 inch section should be cut off each tomato.

2. Remove the pulp with a small spoon, or squeeze gently.

3. Let the tomatoes drain upside down on paper towels.

4. Mix together the chicken, corn, bell pepper and onion in a medium bowl.

5. Combine the olive oil, lemon juice, parsley, Dijon mustard, mayonnaise, pepper and salt in a small bowl.

6. Pour the mixture over the chicken and toss gently to coat.

7. Place a lettuce or spinach leaf in the center of the tomatoes and spoon an even amount of the chicken salad into the center.

8. Serve immediately and enjoy.
