Chicken Salad with Bacon, Lettuce, Tomato and Avocado

Boneless chicken breast pieces, chopped celery, chopped fresh tomato, crisp bacon pieces tossed in dressing prepared from real mayonnaise, chopped fresh parsley, fresh lemon juice, chopped green onion, sea salt, fresh ground black pepper, and Worcestershire sauce. Salad garnished with lettuce leaves and avocado slices.

Ingredients -

3 cups Chopped Cooked Chicken Breast
5 Bacon Slices
2 Celery Stalks, chopped
1 cup Chopped Fresh Tomato
3/4 cup Mayonnaise
1 tablespoon Chopped Fresh Parsley
2 tablespoons Chopped Green Onion
1 teaspoon Lemon Juice
1 dash Worcestershire Sauce
Salt and Pepper to taste
12 Romaine Lettuce Leaves
1 Avocado, peeled, seeded and sliced

 
Preparation:

1. Cook, brown and crumble the bacon in a large skillet.

2. Set aside to cool.

3. Combine the mayo, parsley, lemon juice, green onions, salt, pepper, and Worcestershire sauce. Mix well.

4. Combine the celery, tomatoes, bacon and chicken in a separate bowl.

5. Combine both bowls and mix well to coat.

6. Chill until ready to serve.

7. Serve garnished with lettuce leaves and avocado slices.

Unripe avocado flesh can be difficult to work with. It tends to stick to the outer skin and can be somewhat stringy. Ripe avocados will have a small amount of give when squeezed. Purchase ripe avocados when using immediately, unripe avocado several days later.
