Creamy Chicken Salad with Mandarin Oranges, Celery, and Almonds

Cooked chicken breast pieces, small cooked pasta, halved seedless red grapes, mandarin oranges, chopped celery, sliced almonds, grated white onion tossed in dressing prepared from reduced-fat mayonnaise, reduced-fat whipped topping.

Ingredients -
2 cups Cubed Cooked Chicken Breast
1 cup Cooked Small Ring Pasta
1 cup Halved Seedless Red Grapes
1 (11 ounces) can Mandarin Oranges, drained
3 Celery Stalks, chopped
1/2 cup Sliced Almonds
1 tablespoon Grated White Onion
1 cup Reduced-Fat Mayonnaise
1 cup Reduced-Fat Whipped Topping
1/4 teaspoon Salt
Lettuce Leaves, optional
 
Preparation:

1. Combine the first 7 ingredients in a large bowl and toss well.

2. Combine the mayonnaise, whipped topping and salt in a small bowl and mix well.

3. Add the sauce to the first bowl and toss well to coat.

4. Line salad bowls with lettuce leaves and top with the chicken salad mixture.

5. Serve.

The cooked chicken in this recipe can be prepared any way you choose, such as baking, steaming or microwaving. Consider grilling the chicken breasts. It is a nice touch and excellent way to introduce additional flavor and texture.

Mandarin Oranges

Both canned and fresh mandarin oranges are delicious. The canned varieties have been segmented and the white pith removed. The individual pieces are easy to work with and great for snacks and salads.
