Mexican Chicken Salad Stacks

Flattened chicken breasts seasoned with mixture of chile powder, dried thyme, dried oregano, sea salt and fresh ground black pepper. Chicken breasts are placed under broiler until cooked through. Once cooled, the breasts are thinly sliced and arranged over shredded lettuce that has been dressed in mixture of fresh orange juice, white wine vinegar, extra-virgin olive oil, and honey.

Ingredients -
4 Small Boneless, Skinless Chicken Breast Halves
1 teaspoon Chile Powder
1/2 teaspoon Dried Oregano, crushed
1/2 teaspoon Dried Thyme, crushed
1/8 teaspoon Sea Salt
1/8 teaspoon Fresh Ground Black Pepper
2 tablespoons Fresh Orange Juice
1 tablespoon Extra-Virgin Olive Oil
1 tablespoon White Wine Vinegar
1 teaspoon Honey
4 cups Shredded Romaine Lettuce
1 Ripe Avocado, halved, seeded, peeled, and sliced
2 Fresh Oranges, peeled and sectioned
1/4 cup Queso Fresco Cheese, crumbled, or Shredded Monterrey Jack Cheese
 
Preparation:

1. Place each breast half between two pieces of plastic wrap.

2. Pound the breasts out using a meat mallet to 1/2-inch thick.

3. Remove the chicken from the plastic wrap.

4. Preheat the broiler.

5. Whisk together the chili powder, thyme, oregano, salt and pepper in a small bowl.

6. Sprinkle the mixture onto the chicken evenly.

7. Place the chicken on a broiler pan and broil for 6 to 8 minutes at least 5 inches from the heat.

8. Make sure the internal temperature of the chicken is 170 degrees, turning halfway through.

9. Transfer the chicken to a cutting board and slice.

10. Whisk together the OJ, vinegar, oil and honey in a medium bowl.

11. Add the lettuce and toss to coat.

12. Divide the lettuce among 4 salad plates.

13. Top with the chicken, slices of avocado and orange sections.

14. Serve garnished with a sprinkle of cheese.

Extra-Virgin Olive Oil

Olive oil, derived from the fruit of the olive tree, contains monounsaturated fat, a heart-healthy fat. Olive oil contains vitamins A, D, E and K. Chile Powder

Chile powder is produced from dehydrated and crushed chile peppers, occasionally some additives such as dried garlic powder, salt and other spices are mixed in.
