Chicken Chili Wraps with Onion and Bell Pepper

Boneless, skinless chicken breast strips, chopped white onion, chopped green bell pepper sautéed in vegetable oil and combined with mixture of kidney beans, water, taco seasoning mix, and chile powder. Chicken and vegetables served with flour tortillas, shredded cheddar cheese chopped tomato and chopped green onion.

Ingredients -

1 tablespoon Vegetable Oil
1 pound Boneless, Skinless Chicken Breasts, cut into thin strips
1 Medium White or Yellow Onion, peeled and chopped
1 Green Bell Pepper, seeded and chopped
1 (15 ounces) can Kidney Beans, rinsed and drained
1/2 cup Water
1 package Taco Seasoning Mix
2 teaspoons Chile Powder
8 (10-inch) Flour Tortillas, warmed
1 cup Shredded Cheddar Cheese
1 Medium Tomato, chopped
1/2 cup Chopped Green Onions

 
Preparation:

1. Add the oil to a large skillet and heat over medium-high heat.

2. Add the chicken strips and brown on all sides.

3. Add the onion and green bell pepper and sauté until crisp tender.

4. Add the next 4 ingredients and bring the mixture to a boil.

5. Lower the heat and simmer for 5 to 7 minutes, stirring frequently.

6. Serve the filling with the warmed tortillas and garnish with tomatoes, onions and cheese.

7. Serve and enjoy.

Chile Powder

Chile powder is produced from ground up dehydrated chile peppers. The powder, while not a true substitute for minced chile peppers, is still a nice addition of warmth to most dishes. Chile powder is nice in Mexican dishes, egg dishes, soups, and as an addition to marinades. Read the label on the spice jar to be sure what you are getting is primarily ground chile peppers without a lot of additives.
